- 20 oz Can Black Beans, drained and rinse - 1 Cucumber, peeled and diced - 2 Medium Tomatoes diced - 1 Small Red Onion diced - 1 Jalapeno, seeded and diced very small - 1 Lime Squeezed - 1 tsp Sea Salt - 2 Avocados diced - 1/2 cup Cilantro Sprigs - Queso Fresco Crumble (Optional) |

TIP: Prepare all ingredients and chill before
assembling - Chill all ingredients (except for the salt) to make this dish ready to serve. - Roast Corn to your liking and cut corn off the cob and into a bowl. - Add all remaining ingredients and mix gently - Top with Queso Fresco (Optional) Prep Time: 20 mins (while the corn is roasting, prepare all ingredients) |
